Pumpkins are an October tradition, and Thai Ginger has its own take on this holiday favorite: Enjoy with your favorite jasmine white or brown rice. Don’t cook tonight. Have it delivered while you carve pumpkins with the kids and follow this recipe on “How to Roast the Perfect Pumpkin Seeds.”


How to Roast Perfect Pumpkin Seeds

Step 1. Clean the seeds.

Meticulously clean the pumpkin seeds until there are no signs of pumpkin guts.

Step 2. Boil for 10 minutes in salt water.

Use a medium sized pot of water. Add 1 tsp. salt. Bring to a boil and then reduce to a simmer for 10 minutes.

Step 3. Drain the seeds in a colander and dry lightly with a paper towel.

A light pat down should suffice.

Step 4. Spread seeds onto a baking sheet and drizzle with extra virgin olive oil.

Use about 1 tsp. of oil and massage into seeds. Add salt.

Step 5. Roast seeds at 325 degrees F for 10 minutes.

Remove from oven and stir.

Step 6. Roast for another 8-10 minutes.

Pop open a couple of seeds during the last roast and make sure the inner seed isn’t burning.

Step 7. Share with friends and family.
